Oven baked salmon with lemon thyme & asparagus


~INGREDIENTS~  oven-baked-salmon-lemon-thyme-asparagus2

4 pieces of salmon.

2 tbls of lemon thyme


250g asparagus.

Extra virgin olive

oil to drizzle.

Salt & pepper to season.

4 lemon slices.

Half a lemon.


  • Preheat oven to 400 degrees F or 200 degrees C.
  • Take a baking tray large enough to accommodate both the salmon and asparagus and then tear off a piece of foil double it’s size.
  • Lay the foil on the baking tray and place the salmon pieces on top with a four centimetre gap in between.
  • Lay the asparagus in the gaps and place a lemon slice on top of each piece of fish. Season and sprinkle with the chopped lemon thyme.
  • Drizzle with the olive oil and squeeze juice from the half lemon across each piece of salmon. Pull the foil down and pinch the edges until completely enclosed.
  • Bake in the preheated oven for about 15 minutes. Serve with smashed sea salted baby potatoes and oven roasted garlic hollandaise.
